Sundays are typically muffin-baking days, so perhaps Mondays are good mornings to celebrate the new kitchen creations – whatdoyasay?
This recipe might be my most fav steph-created to date, but they need a name! (all suggestions considered!)
Mix dry:
1 1/2c ww flour
1/2 c oatmeal (for some ruffage!)
1/4c brown sugar
1/3 c flax seeds
Sprinkling of cinnamon, nutmeg, salt
1 generous tsp b.soda & b.powder
Add to dry:
1 grated zuchinni
1 grated apple (skin on for fibre)
–> you could add some grated carrots too if you fancy.
Beat wet well:
3 eggs
1 generous cup of vanilla yog
less than 1/4c oil (i needed some extra moisture and had run out of applesauce – gah!)
2tbsp honey
1cap vanilla
Throw in a handful (or 2!) of choco chips and a generous portion of walnuts. Mix together and get ready to disperse into 1 large muffin tray and 1 mini muffin tray.
Bake @350 for ~20min.
A small muffin is the perfect pre-workout snack and the large muffin is pretty much perfect anytime:) Enjoy!
